A glove that stays on through raw chicken, the prep table, a cooler handle, and a sandwich station is not protecting your customers. It is moving contamination from one surface to the next. Food handling glove regulations are built around that reality: gloves are a single-use barrier, not a substitute for clean hands or careful food-prep practices.

For restaurant operators, commissary kitchens, caterers, grocery departments, and institutional foodservice teams, the right glove program has two parts. First, select gloves suitable for food-contact work. Second, train employees to change them at the right time. Missing either part creates compliance risk, wasted product, and an avoidable food safety failure.

Who Sets Food Handling Glove Regulations?

The FDA Food Code is the primary model used by state and local health departments to set foodservice rules in the United States. It addresses when food employees must use barriers, when gloves must be changed, and how hands must be washed. But the Food Code is a model code, not a federal rule that automatically applies the same way in every kitchen.

Your state, county, city, or local health authority adopts and enforces its own version. That means a multi-location operator should not assume one policy covers every store. Local rules may follow a different edition of the Food Code, require a stricter practice, or have specific rules for glove materials, bare-hand contact procedures, or employee training.

The practical takeaway is straightforward: build your standard around the FDA Food Code, then verify the requirements with the health department that inspects your operation. For employee protection issues, such as chemical exposure during cleaning, OSHA requirements may also apply. Food safety gloves and chemical-resistant PPE are not always the same product or the same decision.

The Core Rule: No Bare-Hand Contact With Ready-to-Eat Food

In most food establishments, employees cannot touch exposed ready-to-eat food with bare hands. Ready-to-eat food includes items that will not receive another cooking step before service: sandwich ingredients, salads, cut fruit, baked goods, cooked proteins, garnishes, and plated meals.

Single-use gloves are one approved barrier. Deli tissue, tongs, spatulas, dispensing equipment, and other utensils can also be appropriate. Gloves are not mandatory for every task if an effective utensil keeps hands out of the food. This is often the smarter choice for repetitive service work because it reduces glove consumption and makes task changes easier to control.

There are limited exceptions under certain local codes and approved procedures. Do not treat an exception as a casual workaround. If your operation permits bare-hand contact in a specific process, it typically requires a documented policy, active employee health controls, strict handwashing, and approval from the regulatory authority.

Raw Food Is Different, but Cross-Contamination Still Counts

Employees may use bare hands to handle raw foods where allowed by local code, such as raw meat before cooking. However, they must wash hands thoroughly before putting on gloves, changing tasks, or touching ready-to-eat food. A glove worn while portioning raw beef cannot be kept on to open a freezer, answer a phone, wipe a counter, or assemble a burger.

That is the point many glove policies miss. The food safety problem is not simply whether a worker wore gloves. It is whether the gloves remained clean for the task being performed.

When Must Food Handlers Change Gloves?

Single-use gloves are for one task only. Employees should discard them when they become soiled, torn, punctured, or otherwise damaged. They must also change gloves before starting a new task, after touching raw animal foods, after handling trash or chemicals, after cleaning, and after touching common-contact surfaces such as door handles, POS screens, phones, or face coverings.

A glove change is also required after any interruption that could contaminate the glove. That includes taking money, stocking supplies, using a tablet, scratching an arm, or returning from a break. Gloves are not washable, and they should never be rinsed and reused.

Handwashing comes before a new pair. Employees must remove used gloves, wash and dry their hands correctly, then put on fresh gloves. Putting new gloves over unwashed hands does not reset the process. Sweat, bacteria, allergens, and contamination can transfer during glove removal or from the wrist and cuff area.

Managers should teach a simple operational standard: if a worker has to wonder whether a glove is still clean, it is time to change it. At case pricing, gloves are inexpensive. A foodborne illness complaint, failed inspection, or discarded batch of prepared food is not.

Choosing Gloves That Fit Foodservice Work

Food-contact suitability should be confirmed before a glove is assigned to prep duties. Ask the supplier for product documentation that supports the intended food-contact use and review your local requirements. Do not assume every disposable glove is appropriate just because it looks similar to a foodservice glove or is sold for general-purpose work.

Nitrile is a strong fit for many commercial kitchens because it is latex-free, offers dependable puncture resistance, and stands up well to oils and greasy prep work. It is especially useful where workers move between food prep and non-food tasks, provided they change gloves and follow handwashing procedures. For high-volume prep, a 5 mil glove can balance dexterity, durability, and cost.

Latex provides excellent fit and tactile feel, but allergy concerns make it a more complicated choice. Some food operations and jurisdictions restrict or prohibit latex glove use. Even where it is permitted, a latex-free program can reduce employee and customer allergen risk. Vinyl and hybrid vinyl/nitrile gloves can be economical for light, low-risk tasks, but they generally do not offer the same stretch, fit, or puncture resistance as nitrile.

Thickness is not a compliance credential by itself. A thick 8 mil industrial nitrile glove may offer better durability for greasy equipment cleanup, but it can reduce fingertip sensitivity for delicate garnish work. A thinner glove may improve control during sandwich assembly yet require more frequent changes if it tears. Match the glove to the task, then keep food-prep gloves separate from gloves used for chemicals, maintenance, or heavy cleaning.

A Purchasing Standard That Holds Up During Service

The cheapest box is not always the lowest-cost glove program. Gloves that rip during prep increase consumption, interrupt production, and encourage workers to keep wearing compromised gloves. Poor sizing causes the same problem. Gloves that are too tight fatigue hands and tear at the cuff; oversized gloves bunch at the fingertips and reduce control.

For a working foodservice inventory, stock at least two performance levels. Keep a flexible, food-contact-appropriate nitrile glove for routine ready-to-eat prep and service. Keep a more durable option for messy back-of-house tasks that require added grip, while ensuring it is specifically approved for the work and never carried from cleaning into food prep.

Operators also get into trouble by buying based on color or thickness alone. Black nitrile may look professional in an open kitchen, and a textured surface may improve grip, but appearance and grip do not establish food-contact suitability. Verify the product documentation, fit, material, and local regulatory expectations before placing a case or pallet order.

A glove policy works when it is easy to follow under pressure. Give employees gloves that fit, keep enough inventory at every station, and make handwashing and task changes non-negotiable. That is how a disposable glove becomes what it should be: a reliable barrier that protects the food, the customer, and the operation.
